Barley for earthiness, Rye for spice and Corn for sweetness, that’s our take on it.
Throw in our blenders’ expertise, some luck for good measure and out comes one of our amazing mash bills.
WOOD
Bring in some fine American Oak, an expert cooper and some great balls of fire, what do you get?
A new make, strong, charred American Oak Bourbon barrel. The kind we use to mature our prideful spirits in.
Perhaps the single-most important contributor of flavor and color, our barrels are what turn our spirits into whiskey.
WATER
The Earth and the Human Body are made up of 70% water. We kind of got stuck at 57.2%

As one can see, water is pretty darn important! We draw it, we boil it, we filter it and we filter it some more, no compromises.

Sounds complicated?
Well it isn’t!
Simply put, it’s the bill of quantities of materials our distillers use to produce the wort they ferment into alcohol.
Mashing is the act of creating and extracting fermentable and non-fermentable sugars and flavor components from grains, by steeping it in hot water and letting it rest at specific temperature ranges to activate naturally occurring enzymes in the grain, which converts starches to sugar. The sugars separate from the mash ingredients and then by addition of yeast, are converted into alcohol.
